Vinification
The grapes are received in stainless steel tanks where they remain in cold maceration for 4 to 7 days at 10°C. The alcoholic fermentation begins with the temperature raised to 20°C and then the selected yeasts are added. The fermentation temperature is maintained between 25°C and 28°C where the batches are tasted daily to define the extraction levels. The malolactic fermentation takes place in stainless steel tanks and the aging is done in a percentage in new and used French barrels for a variable period according to the batch of up to 6 months and a percentage of the wine is retained in stainless steel tanks to achieve a balance between the fruit and the hints of oak
